Mac & Cheese with Hidden Veggies




Is it just me or is lunch a challenge for you? Dinner seems so much easier, for some reason! It’s almost like I forget that I’m in charge of lunch until it is lunch time. :)  About 11:59am, I start scouring the house trying to think of something to feed my kids that I know they eat while also getting some fruits and veggies in too. To broaden our Horizons (pun-intended), we decided to try out a new last minute meal idea using a box of Horizon’s Classic Mac. This couldn’t have been easier.

 

Here’s what you’ll need:  a box of Horizon Mac & Cheese (they have a NEW gluten free version as well), milk, and a container of baby food. Yes, I just said baby food. We used a blend that had sweet potato, squash, and pumpkin. You could also cook up a sweet potato, mash it, and put it in there…but that would just be a lot of work for lunch, wouldn’t it?!?!

Prepare the mac & cheese according to the package directions. Stir in the baby food to your taste (just don’t let your kids see this part–they might throw a fit about eating baby food). :)
